Duck Jerky recipe??

Recommended Posts

BeerHunter

I have been searching high and low looking for a good ground duck jerky recipe with no luck. I have tried a recipe i use for Venison that i love and it was not good. The last batch makes great dog treats, Which isnt a bad idea but i would like to eat my ducks.

If anyone is willing to share a recipe i would be very thankful.

Also as long as i said it. Does anyone dry their duck and use it as dog treats. My dogs loved it but i dont know if it would be bad for the dogs or just plain wrong.

I just used High Mountain Jerky Cure original blend last week on goose and no one can tell its goose jerky. I followed the directions to cure the meat and then smoked them in my smoker and took them out while they were a little moist. I've used it before on beef, but the goose is the best that I have done yet. Good luck with the hunt.

Sorry I didn't read close enough, I used whole meat and sliced about 1/4" thick.

yak,

about how long did yours take to smoke, I just did the same thing for the first time with goose and it was great, not quite as good as venison though.

I also use high mountain, original and pepperoni but I do grind up the meat. Follow the instructions on the package and put them in the oven on low or 200f, keep the door cracked alittle and cook em for alittle over an hour or whenever you feel they are done...I like mine alittle more done. The geese turned out good and I think I like the duck even more. Duck and goose no matter how its cooked is like crack to my dog...he goes nuts for it. So I actually just fry up the scraps that I get when I trim the meat before grinding, he hasn't complained yet.

4 lbs goose breast, thinly sliced

2 c. teriyaki sauce

2 Tbsp tabasco sauce

2 Tbsp liquid smoke

2 Tbsp black pepper

2 Tbsp garlic powder

1 Tbsp meat tenderizer

1 Tbsp Mrs. Dash

1 Tbsp Red Pepper

Mix everything together in a large covered bowl, making sure all the goose is submerged. Put in fridge overnight. The next day, remove goose and put in dehydrator or smoker. Cook on medium until jerky is dry, but not crispy.

I have tried this on goose and duck and it is by far the best I have ever had but stil not as good as venison

I used jack links origanal recipe on goose and spiced it up with black pepper and cajuin seasoning and 10 lbs of goose only lasted a week my kids couldnt keep their paws of of it and guys at work want me to make more. I also used the oven method at 200 degrees with the door closed and really kept an eye on it.

1 cup cooked, ground duck, 3 cups cooked white rice and 1 cup plain yogurt mixed together makes an excellent bland dog food that is great if you have a dog with allergies.

measured ice this morning.   It has not changed in the last 48 hours.    Just the shorelines have melted.   The quality of ice has gone down though.   Still Driving my wheeler on shoe.    Still 20-28 inches out there away from current.    The bay by winter access is the thickest at 30 inches.   Don

Thanks for your efforts!!! Let me know if you need any free city garbage bags; I'm involved with the City of St. Cloud Green Team. You can place them at the Munsinger Garden greenhouse, or any trail access points for easy Park Dept. pickup.

Going to get the kids out on the river today with gloves and garbage bags for Earth day.Plenty of garbage around the local community spots that can be removed.Im sure there will be more but it's something to do and it will look a little prettier out there.

Wow!  Didn't realize it was that bad up there.  That's going take a long time to get turned around.

To give you a idea of what it is like here this is how my dock has sat since last August. The river is at lake level here.  Almost no Spring flow from melting snow. Just a trickle here and there. I've burnt any grass off for 200 feet around my house, farm buildings and farm equipment so there is a little protection in case a big fire gets going. The grass has been burnt off between the highway and the airport to give Waskish a little protection in case a fire gets going south of town. Westwind cleaned their channel last fall so they should be OK for boats. Total acreage of URL and LRL is 272,000 acres so it would ONLY take 177,261,312, 000 gallons of water to raise the lake level 2 feet.

you can get to horseshoe by boat but not far enough to get any fish yet.   This may change in the next few days.   I plan on ice fishing on shoe today.   Should be able to land a nice amount of slabs.   Don

Drove by Elysian on my way home this afternoon. Shoreline didn’t appear to be pulling away, view from the highway for what it’s worth.

Got the property surveyed today. Originally plotted back in 1968 and sure enough there where metal pipes marking 3 of the corners but who knows how long it would have taken me to find them. They placed a monument on the missing corner. Hopefully this warm weather sticks around, need to remove some trees and get the wheel house moved in. Thanks everyone for your responses!

Was out on the lake today. Easy 24-26" inches of hard ice yet.

Drove around the entire lake today. From the road it looks like the warm weather has melted most of the snow. Only saw about a half dozen people fishing. Ice isn’t pulling away from shore yet. Stopped at the Borden access and walked out a bit, kicked myself for not bringing the fishing equipment, easy travel out there.
