Hello Friends, can't wait until Saturday, actually Thursday when we get up there.

Does anyone have some good grilled or baked walleye recipes? Not to sound snotty, but getting a bit tired of the varieties on fried walleye.

We tried to do a citrus one on the grill which was decent, but wanted to see more options.

Thanks

I leave the skin on eyes, spread butter and any seasoning you like. Lay sliced lemon across the fish put on the grill. About half hour later enjoy.

Easy grilled method is as smurfy said. Grill skin down like salmon and spread a little butter on top and then any seasoning that you want. This past weekend, I brought up a slab of salmon, finely diced some garlic and sauted in butter. I then spooned the garlic butter over the fillet as it grilled and added a little Crazy Janes. Then I dumped some leftover stuffing (from a turkey dinner earlier in the week) in the pan of garlic and butter. I turned up the heat and fried the stuffing until it got a crust. Darn good with garlic buttered salmon.

Other spices that work well are lemon pepper, any seasoned salt, cajun/blackening, etc.

Any citrus on top is a bonus if you've got it. I usually rub some olive oil on the skin so that it gets nice and crispy, sometimes adding seasoning to the skin as well.

Cedar Plank Grilled Walleye

2 lbs. Walleye fillets (or more for a larger group)
Favorite fish seasoning or all-purpose seasoning (not a breading)
Olive Oil
2 cedar planks
Pan of water (it can be seasoned or flavored salt water, beer, ect.)

Soak cedar planks for a couple hours in water (or whatever liquid you would like). Brush walleye with olive oil then season with your favorite fish seasoning. Place fillets on cedar planks and put on the grill. Grill till they are white and flakey, serve with a little lemon.

Try Broiled!:  (works best for smaller fillets--12-15 inch wallys (or sunny/crappy/perch):  I don't think eating 4#er's is ever a good idea...)

1.)  Place aluminum foil on the broiler pan.  (fold up the edges so the melted butter doesn't drip off and mess your broiler pan*)

2.)  arrange fillets flat on the foil.

3.)  slice a few small pieces of butter on top.

4.)  salt lightly (or use other favorite seasonings:  I personally like Cavenders Greek seasoning--best meat seasoning there is!  If you haven't tried it, pick some up.)

5.)  Sprinkle favorite diced green.  (small amount of parsley or dill makes 'em look pretty.  Tasty fish is one thing, but Pretty and Tasty--even better!)

(OOOH!  I like it!  Pretty and Tasty, Again!  thinking I will definitely try a sliced tomato next time I broil a few fillets...)

Anyways, Broil til they're flaky and tops are slightly crispy/lightly brown.  (doesn't take long.  ~5-8 minutes)

(* I love this recipe because cleanup is easy--just fold up the cooled aluminum foil off the broiler and pitch it!  Broiler pan shouldn't get messy.)

As a west end guy, not my problem.    Bass and Pike more on my menu.

But "fish boil" is good.   Put potatoes, carrots, onion, celery, etc with water and a bag of spices and salt.   cook until potatoes et al are done.  Set fish on top, cover, cook for a few minutes.   Good eating.

Our favorite is bacon wrapped walleye on the grill.  Soak toothpicks in water.  Cut walleye into 1" chunks, sprinkle on your favorite seasoning.  Cut bacon into 1/2 or 1/3s, wrap around chunk of walleye and secure with toothpick.   Grill until the bacon crisps up turning often.  Then enjoy!  I prefer to stay away from thick cut bacon as it just doesn't crisp up until the walleye is petrified.
