PARTRIDGE RECIPE

4 posts in this topic

JUST COOKED UP TWO PARTRIDGE LAST NITE WITH AN EXPERIMENTAL RECIPE. IT TURNED OUT PRETTY GOOD.

PARTRIDGE QUESADILLA

4 PARTRIDGE BREASTS

1/2 CUP CHOPPED CILANTRO

1 MEDIUM SIZED LIME

1 ONION

1 LARGE FLOUR TORTILLA

1 1/2 CUP MEXICAN CHEESE

PLACE 1/4 CUP OF CHOPPED CILANTRO IN A ZIP LOCK BAGGIE AN SQUEEZE THE JUICE OF THE WHOLE LIME IN THE BAG. MIX THE LIME JUICE WELL WITH THE CILANTRO. ADD 4 CLEANED PARTRIDGE BREASTS, SEAL THE BAG, SHAKE IT UP WELL, AND REFRIGERATE FOR AN HOUR.

CUT THE ONION INTO SMALL SLICES AND SAUTEE WITH THE REMAINING CILANTRO, SALT AND PEPPER, OR WHATEVER SPICES YOU WOULD LIKE.

REMOVE PARTRIDGE FROM BAG AND CLEAN OFF ANY CILANTRO. SALT AND PEPPER TO TASTE AND GRILL.

CUBE THE PARTRIDGE, ADD CHEESE AND ONIONS TO THE TORTILLA. FOLD THE TORTILLA OVER AND EITHER GRILL OR COOK IT IN THE PAN. GARNISH WITH GUACAMOLE, SOUR CREAM AND SALSA.

NOT EVERYONE IS GOING TO LIKE CILANTRO, BUT IT IS A DIFFERENT WAY TO USE UP THE BIRDS THAT WE HAVE RUNNING AROUND THIS FALL.

      Great stuff guys

The lakes took a beating and I was not out on Sunday to see the damage. Saturday I saw the first 4 to 5 inches turn soft. Be careful and check the ice conditions

Sometimes you need em that size.      You guys did push me over the edge so I had to go out Sunday afternoon.  Thanks for that.

I was going to try to go tomorrow (walking out in metro) despite the rain which appears to be light and I have a portable. Are you concerned about the ice conditions deteriorating throughout the day?  Or just for the rest of the week?
