Mix together an egg and some milk in a bowl. Dip the fillets in the egg & milk, and then roll the fillets in Krusteaz pancake mix. Fry in hot oil. Easy and deee-licious!!

Learned this on a fishing trip to Canada a long time ago.

Check out my Crappie Scampi Recipe on Sharing Recipes board...You can spruce it up a little more by rolling the fillets in italian seasoned bread crumbs before placing in the pan as well as a little freshly grated parmasean (sp?). Enjoy them crappies! -nunzio

Dip the fillets in shorelunch fish mix then dip them in egg then dip in potato buds. Fry in peanut oil at 350 degrees. This works great if you like them crunchy.

Anybody have a good recipe for url crappies? I have family coming over tonight and i have a nice bag of crappie filets from last outing to url. I often use shore lunch for my walleyes, but i thought i might try something different. Thanks...

My latest thing with crappies is cheeze-its. The orange ones taste really good with fish. Dip the filets in egg and then with cheeze its and fry them up. Its a different twist from saltine crackers.

broiled crappie is awesome!! With a towel pat your fillet dry. Spray some pam on a cookie sheet and the fillets, add desired seasoning but not much. Keep an eye on them cause it won't take long. Your looking for a flaky white piece of meat.Personally a little cajun seasoning is all I put on the fish and it is delicious!!! Less mess and breading. These are average size fish I don't know how it would be with the slabs!!
