Venison processing recomendations

Recommended Posts

I took my venison trimmings into Schmidts in Nicollet for processing as I have always liked their product. I got a little sticker shock though this year and was thinking I might like to try somebody else next year that isn't so hard on the pocket book. Anybody have any recommendations for decent tasting not so expensive sausage processing in Southern MN?

O'Keefe's Meats is who is in Le Center. Have had them do deer and other wild game over the years with great results.

In the same general area as the other two - I will give a shout-out to Krenick's Meat Processing near Shieldsville. It's not a storefront type of place, he runs his business out of his farm, has a butchering area, a processing room, smoking facility and some refrigeration units all on-site. He's reasonably priced and you get a pretty quick turn, as well. We've gone to them two years now and have done a lot of Brats, Bologna and Sticks through them. When I share the product with friends, most of them say it's among the best they've tasted, and I agree. Jalepeno Cheddar brats are off the charts in my opinion. They're online, google them.

Lonsdale makes good stuff but you really pay for it. Greg's does just as good a job with out the big price tag.

It never hurts to drive around and taste what they have, most places are pretty eager to give you a test because of the pride they have in thier product. I also have NEVER been let down with kenyon meats. I think they are pretty close to middle of the road with excelent products. Also to try while your in the neighborhood is nerstrand, but you pay out the wazoo but then again their product is second to none in the area, i wouldnt hesitate to say best ive ever had

I started to process all my meat about 10 years ago as the prices were climbing fast. I still have some venison sticks made and they do cost but boy are they good. Same with any of the smoked meats. I have checked around in the past but it seems the good shops are all very close in price. I know the shop I go to, the prices seem very high but when I have call others, seems to be the price they charge.

If one at a minimum cuts the deer up and takes just the trimmings to the butcher shop, one can save some there. I also make all of my own hamburger as I can save quite a bit there also and I know I am getting all my meat back for sure.

I also do my jerky as that can get costly but I cannot do as well as the butcher shop I go to, guess I have the wrong recipe.
