I just finished my first batch of pickled pike, and they sure taste great. The only bad thing I noticed is that they seem to have a very soft texture. Any tips for making my next batch firm?? I followed a recipe from a friend....and YES I did use Silver Satin wine.

If a firmer pickled fish is what you want, I've heard perch work excellent.

When its time to put on the wine sauce mixture my recipe has you boiling the mixture and then pouring over the fish. let this mixture cool down before placing over the fish , mine always come out pretty firm.hope that helps.

Try Coldone's recipe in the recipe section here on this site. It's the best I've ever made.
